Bûche De Noël - The Kk by Khanh Dang

A more sophisticated version of Bûche de Noël by Khánh P. Đặng (We share first-last initials). The tree bark was made from tempered chocolate, texture was made by gliding a brush while the chocolate was cooling. The chocolate sponge cake was enhanced with by a coffee syrup infused with Kahlúa. The vanilla mascarpone cream fills the log and helps bind the tree barks on to the body. Finally a generous coat of cocoa powder dusting helps create a matte exterior, and finally garnished with a bit of gold leaf to bring back some pop!
